This sugar-free cocoa is Dutch-processed or alkalized, which means it was treated with an alkali to neutralize its natural acidity. Its delicate flavor makes it ideal in baked goods.
When used alone in cakes, cocoa powder imparts a rich, full chocolate flavor and dark color.
Cocoa powder can also be used in recipes with other chocolates. The combination produces cakes with more intense chocolate flavors than if the cocoa weren't present.
Each 10 oz. tin of Unsweetened Cocoa makes approximately 40 eight ounce servings.
